1kg self raising flour

24g baking powder

1kg sugar

1 kg eggs

1 kg butter

150 desiccated coconut


  1. Mix all ingredients together.

  2. Pour the mixture in to a lined dish about 2cm high (it will double in size whilst cooking) and put in the oven.

  3. Cook at 165oc for 45 mins, poke with a stick to check if its done, if the stick is clean you know its ready to come out

  4. When out of the oven brush with passion fruit syrup.
