Goats cheese pepper tian and three bean salad

200g log goat's cheese
1 yellow pepper
1 red pepper
1 sweet potato
2 large new potatoes
2 cherry tomatoes on the vine
1 bottle Balsamic syrup
1 can three bean salad
1/4 bunch coriander

A lovely summer starter.

Put a griddle pan on the stove to heat up. Remove the seeds from the pepper. Use a ring to cut out the peppers and sweet potato. Char grill the peppers and sweet potato on both sides on griddle pan. Pour a little olive oil over the peppers and sweet potato and place in a hot oven to cook till soft. Remove from oven and chill. Build up tian in ring starting with sweet potato, then pepper and goat's cheese etc. to form a tower.

Slice new potato lengthways. Place in boiling water and cook till soft. Char grill on griddle pan and cool.

Place cherry tomatoes in hot oven and cook till skin start to blister.

Open tin of three bean salad, drain and wash under running tap. Chop up coriander and mix in with salad.

Arrange food on plate and drizzle some balsamic syrup on plate.

Enjoy.
