This is a simple dish that can be made with what ever ingredients you have at home. I will tell you what I have used here but it can be adapted to your own personal taste.
The base of the dish is fried potato, much like sauté potatoes but using new potatoes. On top of these is some stir fried vegetables. Any vegetables can be used, but here I have used a mix of red onion, peppers, celery, courgette, carrot and bean shoots. These were all cooked in a little oil with ginger and a little chilli. If you prefer your food with a bit more of a kick, then simply add more chilli.
The dressing is again a mix of some of the stir-fried vegetables. I have used some very finely diced red onion, ginger, peppers and a touch of tarragon. These were gently cooked in a little oil with some seasoning added. If you keep this warm as the fish is cooking, the flavour will increase in the oil. The longer you leave it the better the taste will be. The fish I have used here is haddock. Some would say it is a strange choice but I like the simple flavour. Again you can use your own choice of fish such as salmon or sea bass. That is it. It is not so much a set recipe, but more of a serving suggestion which can be adapted to suit your own taste in vegetables and fish as well as the amount of chilli you like.
