Recipe of the month
Every month our Head Chef shares some of his much loved recipes. This month he has chosen a firm favourite, cup cakes.
Cup Cakes with Butter Cream
Cup cakes
150g Butter
150g Sugar
3 Eggs
1tsp Vanilla essence
150g Self raising flour
100ml Milk
Firstly beat the butter and the sugar together, slowly pour in the beaten eggs, adding a desert spoon full of flour with each egg. Then mix in the rest of the flour and milk as required until the mixture is of a dropping consistency.
Place into cup cake moulds, but only three quarters full. Then place into a pre-heated oven at 180 degrees, for approximately 20minutes.
Once cooked, place on a tray to cool.
Butter Cream
250g Unsalted butter
500g Icing sugar
Mix the two ingredients together to form a paste. Then pipe onto the cooled cakes, you can add any colours or flavourings to the butter cream to match your taste and designs.
You can also be more creative by adding chocolate sprinkles, marshmallows or sugar strands etc.
